Suggestion:
Your camera may have a beech or snow program mode - use it!
If it lacks that, then increase your exposure by about 2/3 of a stop.

What's happening is that all the reflected light from the bright white of the snow is fooling the meter into thinking things are brighter than they are, so the camera is underexposing the shots, hence the need to intentionally overexpose slightly.

The alternative of course is to adjust exposure and histogram curves in post-processing in PS, Gimp, or whatever image editing program you use.
