Layers, m'boy...layers. Thin spaces between layers act as thermal insulators, much like the space of air between a double-pane window.
 
Layers are definitely the key. However one thing that I now swear by and did not see mentiond here is Under Armor. Not the regular athletic sets but the cold weather weight. Warm, comfortable, and possibly the best thing ever to wick sweat away from your skin. It is a bit on the expensive side but it is well worth it. I teach so there are times when I'll get stuck standing around outside and not moving for long periods, then have to ski hard and sweat, then stand around again. That stuff can't be beat.
