However, it's way harder to get to Vail/Beaver Creek. Not to mention the price factor. CO is way more expensive than SLC. In terms of bang for buck Alta/Bird is the best deal in the country.

I agree with this. But AltaBird's relative advantage vs. Colorado for snow and possibly for price also is lower in this time frame than during most of the ski season.
 
Given the fact that Jason's going with kids, and Tony's point about the shoulder season eliminating most of the price/snow differential with the Cottonwoods, I'd probably do Colorado... just to mix things up. I haven't gone to any of the I-70 joints in years.

In early April, would the drive back to DIA after skiing on Saturday be brutal or will most skiers have already moved on to warm-weather sports?

Usually enough have moved on to summer that traffic is not real bad on any April date. However Easter is fairly late this year (12th) so there could be a bit more on school breaks that week or etc...
